Ibizan tradition on All Saints’ Day

With the arrival of autumn, Ibiza is full of special traditions, and among them, today it stands out with a typical delicacy:

Panellets.

These almond, sugar and pine nut sweets are much more than just a dessert; they represent a custom that has its roots in the ancient celebrations of All Saints’ Day.

In times past, these sweets were prepared at home as offerings to honour loved ones and also as a way of sharing with family and friends during the change of season.

On 1 November, this custom is still alive and well in Ibiza, and All Saints’ Day is the perfect occasion to enjoy these sweets accompanied by sweet wine or local liqueurs.

Ingredients

  • 250gr almond flour
  • 250gr sugar
  • 1 egg
  • 5 grams of pine nuts
  • 125gr sweet potato
  • 1 lemon

Preparation

  • Grate the lemon with sugar.
  • Cook the sweet potato. When it is cold, mix it with half of the egg. Keep the other half to add if necessary.
  • Add the powdered almondvs and mix everything together.
  • Leave to stand for a few hours.
  • Cook at 170 degrees for 15 minutes.
